Okay friends, I’M BACK!
No, the earth did not open up and swallow me whole, but I was on vacation! A MUCH-NEEDED vacation. Got some sun (not that my super-pale skin shows evidence of it), got some sleep, and all is well with the world again. But…now for some new posts!! Let’s GO!
So…it is NO surprise that I have a MEGA sweet tooth.
Would you like dessert tonight, Mrs. Frazier? The answer is always YES.
Now…my dessert options are not always wise or gluten-free, so when I find a {delicious} gluten-free dessert worth splurging calories on, I will happily indulge and spread the good word. With that being said, let me tell you about…
Shabtai Gourmet
Here’s the low-down from the company profile itself: “Shabtai is run by Shabtai himself who learned the art of baking from his father over 30 years ago and have been developing home-style recipes ever since…his mission [is] to provide the finest quality baked goods that are free of many allergens, yet are packed with incredible flavor and texture.”
Take my word for it, Shabtai hit the nail on the head with “incredible flavor and texture.” For being gluten-free, casein-free, lactose-free, egg-free and so on and so on, the moistness of these desserts is absolutely surprising! I’m not sure how they do it, but keep ‘em coming please. Shabtai is also certified Kosher Passover and Kosher Parve.
Shabtai’s website has wonderful resources for those with Celiac’s Disease, including Celiac/Gluten-Free Education, links to the National Foundation for Celiac Awareness website, and tons of resources for gluten free recipes/blogs/restaurants/foundations/camps/hospitals/websites…YOU NAME IT.
I think I’m in love.
Not only is Shabtai delicious, but they offer endless options for those of us with all kinds of food allergies and intolerances (like yours truly). Allow me to share what I’ve just sampled:
1) Raspberry Roll

I’m a choco-holic, so this one wouldn’t usually be my #1 “go-to” but my goodness is it tasty!
{Soy free, casein free, lactose free, peanut free}
FOUR layers of flaky white cake, raspberry filling, and coconut sprinkled on the outside – this is a tart treat I would absolutely have again. The cake is moist, light, and refreshing. A perfect summery treat after your Memorial Day BBQ.

2) Rainbow Cookies

{Soy free, lactose free, casein free}
I need these bite-size treats in my freezer AT ALL TIMES. In case of emergency, of course. Super moist, four-layer little cakes with hints of strawberry and raspberry surrounded by incredibly delicious chocolate. When a sweet-tooth craving hits, these cake bites are perfect! Small enough to be “bite size” or savor them with about four small nibbles, either way they are wonderful…not to mention FUN. Who wouldn’t want to eat green cake??

3) Florentine Lace Cookies

So far, my ABSOLUTE favorite! I could eat a box of these {and these some, if I had them on hand}.

Made with organic cane juice, walnuts, cinnamon, chocolate liquor (hello!), and more, YOU HAVE TO TRY THESE! They remind me of something you wouldn’t dare eat too quickly, but SAVOR. The butteriness of the lace cookies shines with the walnuts, perfectly couples with the cocoa and chocolate liquor in the filling. The chocolate is similar to a ganache or dark chocolate, making the whole cookie feel refined and sophisticated.
4) Swiss Chocolate Roll

When I visit my parents, there are at least three things I can guarantee…a gallon of 2% milk and Dr Pepper in the fridge, and Little Debbie Swiss Cake Rolls in the freezer. My daddy loves some Little Debbie. In fact, my mom’s name is Debbie, and I find that to be NO coincidence.
With that being said, Little Debbie has a run for her money with Shabtai’s Swiss Chocolate Roll!

Devi’s Food Cake with Vanilla Creme Filling
This is not a single serving, my friends! No, Shabtai sends you a HUGE roll that serves 6 (or more if you savor little slivers here-and-there). The light, fluffy vanilla creme pairs perfectly with the Devil’s Food Cake for an amazing gluten free treat for Little Debbie fans.
