Shabtai Gourmet creates some AMAZING gluten free, lactose free, casein free, soy free and dairy free cakes and cookies. They have sent me a few samples of their products and I first have to comment on the packaging which is top notch! If you order from Shabtai, you can be sure your order won’t arrive in crumbs.

The first item out of the package we tried was the Raspberry Roll seen above (click the picture for a better view). WOW! If you bake at all you know how difficult it is to create something like this with normal flour. To make it gluten, casein, soy, and lactose free with zero trans fats is almost unbelievable! The texture of this roll can only be described as wedding cake soft. Perfect! I can’t wait to dig into the other products they sent.
